“Yum!” & “Good for you” should go together, don’t you think?

I am in search of these two together more often these days.  I gave up baking a while back when I gained over 10 lbs in one week and ended up at the Nephrologist looking into my insides more than I thought we should need to at the age of approximately 33.  I had been eating  processed tube cookie dough and found myself blowing up like Veruca Salt before my own eyes.

Ever since then I have avoided baking anything like the plague.  But now that I understand little more about nutrition I am starting to branch out again and there are some really great recipes out there!

I recently found out that almonds are on the list that I try to avoid.  So I substitute Cashews for almonds lots these days.

       Here’s my latest attempt at healthy baking with an adaptation of a recipe from Wholefoodmom.com   

1 cup Cashews (yes organic soaked and dried unsalted would have been great… but I had dry roasted … next time we’ll try a healthier version😉).   Because these were dry roasted I opted to leave out the salt the original recipe recommended using.

1/2 cup Organic Flax Seed Meal

1/2 cup  Organic Coconut Flakes unsweetened

1/2 Sun butter (Sunflower butter)

Blend all of the above in a food processor until made into a smooth paste.

Add in the following and blend again.

1/2 cup Organic Virgin Coconut Oil “Vita Coco”  worked really well.

2 t Vanilla (I realized after using this it had glycerine in it…so no need to add the stevia that Wholefoodmom’s recipe called for)

Blend in a food processor until it becomes a paste.

Spread into a square pan 8×8 or 9×9… the bigger the pan the thinner the bars will be, the farther the recipe will go and the lighter the calorie load😉

Refrigerate for at least an hour.

Chocolate topping can be melted dairy free chocolate chips or make your own chocolate topping.  You can find a recipe for that on Wholefoodmom’s website also:)

I added chopped Walnuts to a couple of batches that was a good option too.
